What to do with cabbage? That's the big question we've decided to answer today! Because yes, there are plenty of easy and tasty recipes to be made with this vegetable often shunned by the little ones. With these oven-baked cabbage rolls, we can assure you that times will change ;-) Try this recipe for "apple" cabbage leaves stuffed with minced meat and Parmesan cheese, to be eaten as an aperitif or served with rice as a main course.

  • Wash the cabbage leaves, then blanch in boiling water for 10 minutes. Drain, run under cold water and leave to dry on a clean cloth.
  • Pour a little oil into a frying pan and brown the minced garlic. Add the minced meat, cook for a few minutes and set aside.
  • In a bowl, combine the meat, egg, grated Parmesan, nutmeg, salt, pepper and chopped scamorza cheese.
    Mix the ingredients first with a spoon, then with your hands, until smooth.
  • Take the cabbage leaves and the white part in the middle (this part is a little firmer than the green part we're going to use for the rolls).
  • Take half a cabbage leaf, place a spoonful of filling on one end and roll the leaf on itself to form a roll. Do the same with the other cabbage leaves.
  • Using a kitchen brush, spread olive oil on the bottom of your baking tray, then place your rolls on top.
  • Drizzle your rolls with olive oil and bake for 25-30 minutes at 350°F/180°C.
    Once out of the oven, place your rolls on a plate and enjoy!

Yes, but only if you've used ingredients that haven't already been frozen.

How do I close the cabbage rolls?
Here, we've made sure that the end of the leaf is placed underneath to close the rolls. However, you can seal them with a toothpick, for example. Remember to soak them in water ten minutes beforehand to prevent them from burning during baking.

What can I use instead of minced meat to make cabbage rolls?
A good idea is to use crumbled sausages, but you can also make vegetarian versions with potatoes and scamorza cheese, or with other vegetable-based fillings.

Can I cook cabbage rolls in a frying pan?
Yes, you can. Once ready, put them in a frying pan with a little fat, then cook them over medium heat for about 15 minutes, turning them over halfway through.

What can I use instead of nutmeg?
It's not a fundamental ingredient, so you can choose not to use it in this recipe.

What can I use instead of scamorza cheese?
Choose a stringy cheese such as Emmental. Beware of mozzarella, which may unfortunately give off too much water.
