Spaghetti With Faux Meat Sauce

Lately I have been reminiscing about my childhood and trying to introduce my boys to dishes and food I grew up with.

I grew up in Eastern Europe in the 70' and 80' so most of the meals were pretty basic and cheap to make. Oranges and bananas were a treat and most of the time available only during Christmas.

Exotic fruit and food was not on a daily menu and majority of the population didn't even know what kiwi was growing up.

The only pasta we had was spaghetti and of course homemade egg noodles.

Since spaghetti were pretty affordable they were served few times a week. Beef as all meats was expensive so my grandma and my aunt used to make us "faux" meat sauce.








Instead of ground beef they used  cheap soft salami (like Lyoner). Instead of tomatoes they used ketchup.

The result was delicious....or at least that's what I remembered.

I decided to try it out on my children.

The result was.......delicious. Both of my boys asked for seconds.

With a little tweaking you can try this "faux" meat sauce  and judge for yourself.


Ingredients:
1/2lbs Dry Spaghetti200g Lyoner Salami (you can use Bologna for cheaper version) (cut into thin strips or small cubes)1 Onion (finely chopped)2-3 Cloves Garlic (crushed)2/3 cup Ketchup2 Tbsp Butter (you can use oil)Parmesan CheeseParsley

Cook spaghetti Al Dente and put on the side.



In a skillet melt the butter and fry the onion till it's golden brown. Add cut up salami and fry on a high heat till nice and brown.





Turn the heat down to medium and add the ketchup, garlic and little bit of water (if the sauce is too thick).



Let is cook for 5 minutes while occasionally stirring.

Plate the spaghetti . Top them with the sauce, Parmesan cheese and chopped up parsley.
