Spinach and Prawn Pasta
I must confess, I have had this post ready for the last week, but I have been unable to start it. Writers block? So I am simply just going to write it or it will never get done. This is the first of many recipe posts from our garden. We have a lot of spinach and seem to be using it in every second meal. One day I pick almost all of it, the next day it is back again. Never-ending baby spinach, things could be worse. Lettuce is the second biggest crop at the moment and next week we will have broad beans – hopefully! The garden is definately a success. The first meal we made with the baby spinach was a delicious. A simple spinach and prawn pasta, not without a huge amount of garlic. It was definately one of the quickest and more-ish pastas we have made in a while. It is so exciting posting our first meal from our garden. Spinach and Prawn Pasta 300g prawns 3 cups baby spinach – uncooked head of garlic olive oil parmesan spaghetti Dice the garlic and brown in a saucepan. Meanwhile cook the spaghetti. After the garlic is browned add the prawns and cook. Once the spaghetti is done, drain and dress in olive oil and parmesan – this is the step that makes all the difference. Add the spinach a minute or two before serving – as you don’t want it to be too cooked. Mix the prawn mixture with the spaghetti and top with parmesan and parsley. Serve with garlic bread.
