Remove the bones from the chicken and cut the thighs in half. Melt the butter with olive oil in a hot pan and sear the chicken for 5 minutes on each side.
Add salt, pepper, thyme, and stir. Pour the water into the pan and cover. Let it simmer for about 45 minutes.Melt the butter and oil in a pan, add sliced mushrooms, and sauté for 5 to 10 minutes. Add chopped shallots and spinach and sauté for another 5 to 10 minutes.
Season with salt and pepper. Pour the vegan cream into the pan and let the sauce reduce for about 10 minutes.Place the cooked chicken pieces in the sauce and there you have it! Your dinner is ready!
