Spinach-Cheese Frittata
Everyone knows how important breakfast is.
Jump start your weight loss/energy/mood/yadayadayada. Oatmeal is usually my breakfast of choice. So many ways to enjoy it. Add some fruit/yogurt/cinnamon/nut butter/yadayadayada. Everyone knows about the incredible-edible-egg; a nutritionally dense food, high in protein, cholesterol and low in fat. 1-large egg has 70 calories, 4 g fat, 211 mg cholesterol. When I am trying to lose a few pounds, an egg is a good breakfast. It keeps me satisfied and it is versatile. You can make omelets/scrambles/wraps/yadayadayada. But what if I'm also trying to watch cholesterol and not spend so many precious points at breakfast? (a large egg=2 points) My DD switched to egg-beaters several years ago. I was averse to that change. Who knows why! I recently changed my mind! Check this out: 1 serving is equivilant to 1 large egg, contains 30 calories, 0 g fat, 0 mg cholesterol. I started using egg-beaters in cakes and other baked goodies instead of incredible-edible-eggs and saved all kinds of calories. They also make the thinnest omelets, almost like a crepe, the way they pour in the pan! When I found this tasty looking recipe that was printed in the WW weekly dated Jan 10-16, I had to try it, with a few minor changes, of course! Spinach-Cheese Frittata the Diva Weigh 1 1/2 cup egg beaters 1 cup chopped spinach 2 TBLS chopped scallion 1/2 cup chopped green chile (or any chile pepper you prefer) 1/4 tsp salt 1/4 tsp pepper 1/2 cup grated low-fat cheddar cheese Pre-heat oven to 400 degrees. Spray a 12 inch oven-proof skillet with cooking spray. Mix everything except the cheese in a bowl. Pour mixture in skillet and cook over medium heat until partially set, 5 minutes. Sprinkle 1/2 cup cheese over top. Put skillet in oven and bake for 5 minutes. Remove and let stand for 1 minute. Cut into 8 wedges. yields 2 wedges per serving (1 point per serving! the original recipe was 3 points per serving!) cook 5 minutes on the stove top cook 5 minutes in the oven cut into 8 pieces 2 pieces per serving salsa makes everything better! yum-O! This is easy, quick, good! A good recipe to make and freeze in individual servings for days when you just need something in a hurry! This makes a good egg sandwich/taco/wrap/yadayadayada. The possibilities are endless! There are still incredible-edible-eggs in my frig. Sometimes, you just can't beat a real hard-boiled egg for a snack!
