Veggie Hummus Wrap, Chautauqua Salad + Birthday Bash

Good Evening!

I am finally getting back into the groove of things and had a nice day. Work was fun and the kids and I also had a good time today.

I squeezed in an hour workout circuit and ate some delicious food today. We had grilled out on Sunday night so we had leftover grilled chicken and veggie kabobs so I made a wonderful Veggie Chicken Hummus Wrap for lunch.

Veggie Chicken Hummus Wrap

1 La Tortilla Factory Whole Wheat Tortilla
1 tablespoon Sabra Pine Nut Hummus
1 Veggie Kabob- Zucchini, Squash, Red and Green Bell Pepper, Red Onion, Mushrooms. diced
3 oz of grilled chicken

Heat tortilla in the microwave for 20 seconds, then spread with hummus and top with diced veggies and chicken. Wrap and Enjoy!

I love grilled food and the veggies were awesome. Great use of leftovers today.

Dinner was a salad that I could not wait to replicate at home. I ordered this at the After Words Cafe in Chautauqua and absolutely loved it. It is a Dried Cherries, Toasted Walnut, Red Onion and Blue Cheese Salad and it is an outstanding combination. I love the tart cherries and the bite of blue cheese together. They served it with a Cherry Vinagrette that was amazing but I have not found cherry vinegar yet. I dressed mine with my normal dijon vinagrette and loved it! I was also able to control the goodies, the salad there came with a bit to much of a good thing! Or what I am really trying to say is that all the goodies add up to lots of calories so I am able to put just a touch of everything on it and it is still fantastic!



Chautauqua Salad

2 cups Spring Mix Lettuce
1 slice of red onion
1 1/2 tablespoons of dried cherries
1 tablespoon of toasted walnuts
1 1/2 tablespoons blue cheese

Dressed with 1 tablespoon dijon mustard, 1 tablespoon of balsamic vinegar and a splash of olive oil.

Love, love this salad!

One of the other things I loved about Chautauqua was indulging in Perry's Birthday Bash Ice Cream. Oh so good and I definitely had more than one cone of this stuff. Luckily, I am able to duplicate the experience with a lighter version of the same stuff. Dreyer's Slow Churned Take the Cake Ice Cream is very similar. So I treated myself to a Birthday Bash Sundae tonight.

1 cup Dreyer's Slow Churn Take the Cake Ice Cream

I also had a couple of slices of watermelon today.

Okay, I am off to indulge in a little Bachelorette, much to the dismay of my husband and then off to bed!
