Teriyaki Chicken Bell Pepper Boat
This dish is healthy and a great appetizer. It can also be your meal if you want to eat something light and not heavy. I basically took my Creamy Chicken Triangle Puff Recipe and changed a few small things. The big difference in the filling is that you do NOT mix any curry powder and carrots. Teriyaki Chicken Bell Pepper Boat What you need: - olive oil - Sweet teriyaki sauce - bell peppers (2-3; each bell pepper makes 4 “boats”) - spring onions (diced) - garlic (minced) - 2 chicken breasts (cut into small 1inch squares) - 3-4 large mushrooms (cut into small cubes) - handful of raisins - 3/4 to 1 cup of fat free cream cheese - seasoning (salt, pepper, garlic salt) 1. Heat the oil then add the spring onions. Then add the garlic. 2. Add in your diced chicken breast and season to taste. Cook chicken thoroughly. 3. When chicken is cooked, transfer into a large bowl. Don?t pour all the juices into the bowl because you don?t want your filling to be too watery 4. Mix in the mushrooms and raisins. 5. Slowly stir in the cream cheese. 6. Stuff your bell pepper “boats” with your mix. 7. Drizzle teriyaki sauce on each “boat” 8. Place on a baking sheet that is lined with aluminum foil. 9. Bake in the oven at 375F for 10 minutes then enjoy!
