The Incredible Edible Egg
![]() Good Afternoon! It has been one of those crazy days were I just got around to eating and cleaning up for the day. My belly is full and I am clean and dressed and it only took me until 3:00pm to accomplish those things. It has been playdate day and the kids and their cute friends have been going crazy and having fun. We are trying to get in as much play time in before school starts. I was able to sneak in a workout while the kids played and I did a 30 minute interval run and got nice and sweaty, burned 425 calories. Then I did a plyometric/weight circuit workout for 30 minutes which is supposed to burn an additional 300 calories. I did not wear my Polar HR monitor so not sure if that is true but I like the sound of it and it was tough so I think I have sufficiently burned off my tiramasu from yesterday. For lunch I made a quick Egg Scramble with Avocado and Salsa, this would also make a great breakfast. Egg Scramble with Avocado and Salsa 1 whole egg 1 egg white olive oil cooking spray 1 tablespoon Koki's Green Garlic Salsa 3 slices of Haas Avocado Spray a small skillet with olive oil cooking spray and turn burner on to medium. Add eggs and scramble the yolk. Cook for 1-2 minutes or until cooked through. Remove from heat and top with salsa and avocado and maybe a tortilla chip or two. Enjoy! Yum! This heat the spot and eggs really are incredible. One egg has 13 essential nutrients in varying amounts ? including high-quality protein, choline, folate, iron and zinc ? for only 75 calories. I often use just egg white but the yolk provides you with choline, folate, lutein, zeaxanthin and vitamin D. So, I decided to have 1 whole egg and 1 egg white. ![]() Now, I don't know if I have ever blogged specifically about Koki's Green Garlic Salsa or not but this stuff is Amazing! It is a local product and can be found at Central Market. I absolutely love this salsa, it is so fresh and the green garlic makes it really special. If you live in Austin, you have got to give this a try. You can find it in the produce section. It looks like we may be going out to eat tonight and running a few school errands. Emmet needs some new shoes so we are going to head to Nordstrom's and I am looking for a few healthy eating options in the area... we shall see what the rest of the day brings us.
