Ingredients: In the spirit of Dr. King's Day and Birthday I want to do something special! Being the cook that I am I decided to make some of his favorite foods . Then I realized he shared the love of Sweet potatoes with our president Barack Obama!! So I ended up making everything on the list: Fried porkchops, Sweet potatoes, Rolls, Mac and cheese, and the wine of the south Iced sweet tea. This was a southern feast that had to be shared with you. I took pictures of the dinner, but i'm only sharing the mac and cheese recipe . The recipe I put my new little twist on! I hope you will enjoy this recipe and have a happy and blessed Martin Luther King Day!; 1 bag of macaroni pasta(12oz); 2 cups-milk; 1/2 cup-half n half; 4 oz-cream cheese(soften); 2 egg yolks(beaten); 4 cups-mozzarella cheese; 1 large onion; 10 strips of bacon; 1 tsp-sugar; 1 TBSP-balsamic vinegar; 8 TBSP-butter; 1/4 cup-flour; 1 tsp-black pepper; Paprika and more pepper to sprinkle; Salt to taste(optional); You will need a greased baking dish.

PREHEAT OVEN 350

Cook Pasta...
1. Cook pasta in salted boiling water for half the package time.(Ex. If package says 12 minutes cook 6-8 minutes) Add Vegetable oil to water while cooking to keep pasta from sticking.
2. Drain macaroni and set aside.

PASTA SHOULD BE ABLE TO EAT BUT STILL FIRM!

Prepare and Cook Onions......

3. Wash and cut onions into strips.
4. On medium-high heat, saute onions in 4 TBSP butter just until they start to soften.
5. Add sugar and balsamic vinegar and cook until completely browned.

Now Bacon....
6. Cut each strip of bacon in half.
7. In anothe pan, cook bacon on medium-high until crispy.

RESERVE 1 TBSP BACON GREASE.

8. Crumble bacon and set aside with onions.

Make Sauce.....

1. On medium-high heat, cook 4 TBSP butter, bacon grease, and flour for 2 minutes.
2. add milk and half n half continue cooking just until mixture starts to thicken.
3. Temper the beaten egg yolks with some of the sauce.( Add a small amount of the sauce to the eggs while whisking constantly)
4. Add the egg mixture to sauce while whisking constantly.
5. Cook 1 minute.
6. Whisk in cream cheese and 2 cups of mozzarella cheese until completely melted( This can be done off heat to avoid burning)
7. Add in macaroni, half of the bacon, half of the onions,black pepper and salt if using, and pour into baking dish.
8. Top with 2 cups mozzarella cheese,and remaining onions and bacon.( In that order please)
9. Sprinkle with pepper and paprika
10. Bake 15-20 minutes or until brown, cool and Enjoy
