- Wrap your potatoes in aluminium foil and bake for 1 hour at 350°F (180°C).
- Cook the onion in olive oil and add bacon when your onion is translucent. When the bacon is cooked too, set aside.
- Scoop out the flesh of the potatoes leaving a shell that is about 1/4 inch thick. Mix potato flesh with bacon, onion, cream, cheese and chives. Season to taste.
- Fill the potatoes with the stuffing. Bake for 15 min at 350°F (180°C).
- There you are, sprinkle some chopped chives on top !
