Wrap the potatoes in aluminum foil and bake in a preheated oven at 350°F (180°C) for about 1 hour until the flesh is cooked.
Meanwhile, sauté the onions in a bit of olive oil until translucent. Add the bacon and set aside in a bowl once cooked.
Scoop out the flesh of the potatoes, leaving about a 1/4 inch thick shell. Mix the potato flesh with the bacon, onion, cream, cheese, and chopped chives. Season to taste.
Fill the potato shells with the mixture and bake for about 15 minutes at 350°F (180°C) until golden.
And there you have it! Sprinkle some chopped chives on top!
