Hello 2011! And hello to the first official work day of the new year. Everyone have their resolutions set? I do! Read about them here :) And here (as well as a giveaway!)

As usual, I want to get healthy. I've lost the baby weight, but there's plenty more where that came from. Hehehe.... so This Week's Cravings is all about healthy recipes. Please share your favorite dishes, diet tricks, exercise advice - and your new year resolutions!

Let's get H-E-A-L-T-H-Y - HEALTHY!!


My recipe this week isn't really even a recipe. It's two ingredients. Boil and microwave. Toss and refrigerate. It's tasty and quick.

Veggie Pasta Toss


1 bag Valley Fresh Steamers
2 cups Ronzoni pasta (I prefer a short style noodle for this recipe.)

Valley Fresh Steamers are wonderful - I completely support fresh veggies and home made sauces, you know I do. But sometimes in the winter, these are just... well wonderful! Plus, a local grocer recently ran a sale and I was able to pick up several bags for just over a $1.00!


They come in several variations and include sauces. For these photos, I'm using 'Healthy Colors,' a blend of carrots, zucchini, tomatoes and yellow bell peppers in an oh-so-yummy herb infused extra virgin olive oil sauce.

Ronzoni pasta is my favorite. It is packed with calcium, vitamins and fiber. So I don't feel too guilty for having pasta. Also, watch for coupons; Boxes in my store are around $1.50 but I'm constantly getting $1 off coupons which makes them a steal!

To make:

Boil pasta till al dente. Drain and set aside.
Prepare veggies according to package - place upright on a microwave safe plate and heat for 6-8 minutes.

Toss the two together. Add some extra chopped herbs for freshness.

This makes a great side for 4 people. Or add grilled chicken, fish or shrimp and it's a perfect main dish for 2. I am packing this for my lunches with leftover meat from our dinners.
