Vegan Slam
I remember the pre-vegan days when I’d have breakfast at that restaurant that serves the breakfast slams. Now I hate going to non-vegan restaurants for breakfast because they usually just have oatmeal and toast that you can have and not even nondairy milk. Want a big vegan slam that’s healthier and tastier? Have it at home! Here’s what I came up with: Scramble 12 oz. of firm tofu in nonstick skillet with cooking spray and add 1 and 1/2 servings of Daiya or other vegan cheese. *If you can get your hands on We Can’t Say It’s Cheese – add 2 servings of it instead. It makes the ultimate vegan cheesy scramble!!! Season to taste with salt and pepper and/or your favorite seasonings. (1/4 of recipe 3 pts) Saute a bunch of chopped kale in cooking spray and then add a little white balsamic and cook till reduced, season. (0 points) Brown Tofurky breakfast links in a nonstick skillet. (1 serving 3 pts) Bake frozen sweet potato fries (I use Alexis and they are 1 pt per serving) or make your own baked fries. 4 servings.
