Vegetable and Mozzarella Cheesy Tray Bake
A tray bake of peppers, onions, tomatoes, courgettes, Roquito chilli peppers and potatoes, topped with two kinds of Mozzarella. All baked in the oven till cooked and the cheese is gooey and golden. This was a fridge clear out recipe which was so easy to do, and turned into a vegetable cheesy goodness. Use a disposable foil tray like I did and it's even easier! You could prepare all this in advance apart from the potatoes (or they'll go brown) and you'll have it ready to serve in no time. Be sure to slice the potatoes very thinly - or they wont cook. I find it best to use a mandolin slicer. There's no real recipe, just as much as you fancy of the following: red bell pepper, yellow bell pepper, courgette (zucchini), red onion, tomato, potatoes and a good amount of grated Mozzarella and Buffalo Mozzarella. I also added a few sliced Roquito hot sweet chilli peppers. How: Preheat your oven to 200c/400f or Gas 6 Slice the veg up and throw into your tray, using just a little care to layer in some sort of order. First the peppers, onions, courgettes and chillies. Sprinkle with salt and pepper. Then add the tomatoes. A little more salt and pepper and then top with the potatoes. Don't forget they do need to be cut really thinly - or they will burn before cooking and be horrid. Now a little more salt and pepper. Now sprinkle with the grated Mozzarella and the sliced Buffalo Mozzarella.
Bake in your preheated oven for about 35 to 40 minutes - by then the vegetables will be nicely cooked and the cheese will be melted, gooey and golden. Serve straight away with whatever you fancy - even just nice crusty bread will do. I served mine with some lemon and garlic chicken - recipe to follow soon. related searches : Vegetable
