This cake, named after queen Victoria of England, is litteraly at the origin of the british afternoon tea. Moist and sweet, it will be perfect for a fancy tea wih friends.

  • Victoria Sponge Cake - Video recipe ! - Preparation step 1In a bowl, put softened butter and sugar, and beat until it's creamy. Add vanilla extract, then eggs one by one, beat the batter each time.
  • Victoria Sponge Cake - Video recipe ! - Preparation step 2Then add half the flour, previously sieved, then the remaining flour, then baking powder, beating the batter every time.
  • Victoria Sponge Cake - Video recipe ! - Preparation step 3Grease an 8 inches mould, then pour the batter in it. Bake for 50 minutes at 340°F (170°C) (check with a knife if it's well cooked).

    Pour the very cold cream in a bowl, then whip it. Add sugar step by step while whipping until it's stiff.
