Sponge cake, the easy recipe
A beautiful sponge cake as we usually enjoy in Italy (better known as Pan di Spagna) :-)

In a bowl, put the eggs, salt, vanilla, and half of the sugar.
Whisk at full speed for about 5 minutes. The mixture should swell and thicken. Add the other half of the sugar and whisk for another 1-2 minutes.
Sift the flour over the mixture and gently fold it into the batter.
Pour into a greased cake pan and bake for 30 minutes at 350°F (180°C).
And there you have it, your sponge cake is ready!
Observations
Sponge Cake vs. Genoise Biscuit: do not confuse sponge cake with genoise biscuit, which is prepared differently.
Basic Recipe for Many Cakes: like the genoise biscuit, sponge cake is perfect for making layered cakes.
