Victoria sponge cake - video recipe !
This cake, named after queen Victoria of England, is litteraly at the origin of the british afternoon tea. Moist and sweet, it will be perfect for a fancy tea wih friends.

Preparation
In a bowl, put softened butter and sugar, and beat until it's creamy. Add vanilla extract, then eggs one by one, beat the batter each time.
Then add half the flour, previously sieved, then the remaining flour, then baking powder, beating the batter every time.
Grease an 8 inches mould, then pour the batter in it. Bake for 50 minutes at 340°F (170°C) (check with a knife if it's well cooked).
While the cake is getting cold, prepare whipped cream :
Pour the very cold cream in a bowl, then whip it. Add sugar step by step while whipping until it's stiff.
Once the cake has cooled down, cut it in half, and spread some strawberry marmelade on it.
Then put the whipped cream on top of the marmelade.
Put back the top of the cake, and sprinkle with icing sugar.
You are ready for tea time !
