Virgin Malibu Pineapple

It's Friday and a long weekend is ahead.Yippee!. I don't want to think about what is waiting for me when I return to work and "life". As you are reading this post, I am probably on the road with my mind lingering else where. I know you will probably be the same and busy getting ready for your weekend activities. So, I would like to make a quick post as with the regular Friday post I always try to share a simple yet fun drink for the weekend. I'm a light weight when it comes to drinking. My favorite drink is Malibu Pineapple as it's light and fruity to suit my taste buds. Last week, I tried to make a virgin version of it. It's so refreshing with fresh juice. I went to Whole Foods looking for rose water to try a cookie recipe from Lazaro and I found a good looking organic pineapple and also a young coconut there. It's about time for another experiment. I had received a bottle of agave from Xagave a little while back but hadn't gotten the chance to explore it until now. I tried it with this beverage and the result was satisfying. I only used 2 teaspoons instead of a 1/4 cup of syrup the mixture called for. The fun idea was to create pineapple sorbet ice cubes. They are like sorbet ice cream and I can eat them by themselves! If you have different ice trays, please try it. It will add a flair to the cubes! Hope you enjoy the drink and the weekend. Virgin Malibu Pineapple for 2 Ingredients: 1 cup coconut juice 2 tsp Xagave 1/4 tsp kosher salt 2 oz pineapple juice mixture (recipe below) 1 tbsp coconut meat 4 ice cubes 6 pineapple ice cubes (recipe below) Directions: Pour coconut juice in a blender, add pineapple juice mixture, Xagave, salt, and ices in a blender Blend on "liquefy" or until mix Add coconut meat and pulse 3 times Pour into a glass and add pineapple ice cubes Pineapple ice cubes: Ingredients: 1 pineapple 2 tsp Xgave small pinch of salt Directions: Peel, core, and cut pineapple in cubes Add to a blender, then add Xgave, and salt. Puree it Sift it through a strainer. Discard any remains in a strainer. Save 2 oz. and set aside Pour the juice to ice trays and put in a freezer until it forms to an ice. 1 pineapple can fill 1 ice tray Happy 4th of July! ![]() related searches : Virgin
