What does a gluten-free vegan eat?
Hello again! In case you missed this morning’s post, I’m playing around with blogging my daily food. This is for a number of reasons, a few of which include… * To eat more meals and fewer snacks since in the world of nursing and shift-work snacking is rarely possible. * It may help me make those final little changes to my diet that will help get my IBS under control. * To force me out of my dinner rut and encourage me to be more creative and come up with new (and exciting?) recipes. * To show what a gluten-free vegan can eat and enjoy! So, today started with a new occurence: Gluten-free muesli with soya milk and a chopped apple. I usually just have an apple for breakfast but I’m feeling the need for something more substantial these days. I had a glorious nap in the sunshine pre-lunch as I think I had about 5 hours sleep last night until I was woken up by awful hip and thigh pain- really weird. Have no idea what that was caused by… Lunch was one of my faves, For the record, that is a man-sized bowl. Tom usually has it filled with pasta, I have it filled with mixed leaves, celery, tomato, and avocado. Dressed with some kind of olive oil, vinegar, mustard, herb combo that I made up last week and a side of leftover roasted new potatoes. Amazing!
I always have something sweet post lunch (daily treats are a necessity, after all) and today was no exception- honey-roasted cashews and peanuts. And a few Summer Peaches from Goody Good stuff. These are so good! Vegan and gluten-free, and are available in both the UK and the US. They’ve only just launched this line in June so they are still working with distributors. To keep abreast of where they are available check this page out. And, I may or may not have had more sweets than pictured… When Tom got back from work we went for a brisk 40 minute walk to a local green area since neither of us has made it to the gym today. On our return dinner was promptly put together. It was far too hot to cook so I just chucked whatever was in the fridge into a bowl: Spiralized carrots and courgettes with loads of hummus (which seems to have sucken into the veg), and leftover roasted parsnips, red pepper, courgette, mushrooms and sweet onion. This was so good. In fact, there was not enough of it. Since I am the queen of snacking today’s snacks were a nakd bar (wolfed down pre-walk…) and a chopped pear with a tablespoon of peanut butter.
Right, I’m off to study some anatomy & physiology before relaxing in front of the box with the hubs. And there endeth the first day of my daily eats (gosh one has to be on the ball with the camera and taking photographs!). I will probably see you tomorrow! Night all x
