
A meaty portabella burger with cheese to please both vegetarians and meat eaters too.
Preparation: 10-15 minutes

Ingredients:
1 (16 ounce) package baby portabella mushrooms, chopped
1 large yellow onion, peeled, diced
7 slices whole wheat bread, chopped in (food processor)
1 cup Colby jack cheese, shredded
1 tablespoon balsamic vinegar
5 large eggs, slightly beaten
1 tablespoon olive oil or your preference
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper
Directions:
1. In a large bowl, combine mushrooms, onions, bread, cheese, balsamic vinegar, salt, black pepper and beaten eggs.
2. In a large skillet over medium heat, place patties into a skillet with hot olive oil. Cook for 7 minutes on both sides or until brown.
Tips:
# 1 If forming burgers isn’t your cup of tea; place a sandwich bag over the lid of plastic container. Press mixture into lid then flip into hot skillet.
#2 Top with your favorite condiments.
#3 Substitute any kind of mushrooms.
