How zucchini pesto became the summer sauce that rescues every pasta dish and why you'll want it now

When it comes to sauces that smell like summer, we’re talking about… zucchini pesto!

You know those hot days when you’re craving a quick meal that’s still really satisfying? No way are you spending an hour in the kitchen, or whipping up a sauce that’s too heavy. You want something fresh, simple, creamy… and above all, something you can whip up with next to nothing :)

That’s exactly where zucchini pesto comes in. One zucchini, a few basil leaves, a little Parmesan, pine nuts or almonds, olive oil… and presto, you’ve got a mild, fragrant sauce that’s perfect for pasta.

And the big advantage is that it requires no cooking. Yes, really, no cooking! Just blend everything together, toss it with the pasta, and dinner is ready.

Why do we love zucchini pesto?

First of all, because it’s a nice change from classic basil pesto. It retains that subtle Mediterranean flavor we love so much, but the zucchini adds a softer, lighter texture.

It also helps create a nice, creamy sauce without adding any cream. And honestly, that’s really handy when you want a rich, indulgent dish that isn’t too heavy.

Another plus: zucchini has a fairly subtle flavor. So it pairs very easily with basil, garlic, lemon, Parmesan, or even feta. It’s kind of the chameleon ingredient of summer: it slips into everything and makes everything creamier.

The perfect sauce for pasta

Of course, the first idea is to serve this pesto with pasta. And between us, that’s definitely the best way to start.

Choose short pasta like fusilli, penne, or farfalle so the sauce clings to it well. Add a spoonful of the pasta cooking water to thin out the pesto, stir it in, and you’re all set.

The little secret is actually that pasta water. Thanks to the starch it contains, it helps the sauce coat the pasta evenly. The result: no dry pesto left at the bottom of the bowl, but a truly creamy sauce that coats every strand.

For an even more indulgent dish, you can add a few cherry tomatoes, mozzarella, Parmesan shavings, or toasted pine nuts. Simple, effective, and perfect for a summer meal.

With the temperatures warming up, we're not against a little summer touch in our meals! With this super easy zucchini pesto recipe, you can spice up bruschetta, sandwiches, or even add it to pasta for a creamy and delicious dish . Our tip?...

Whether hot or cold, it can do it all

Another thing we love about zucchini pesto is that it works just as well hot as it does cold.

With hot pasta, it becomes creamy and rich. With cold pasta, it turns into the perfect sauce for a salad to go. So it’s a great idea for lunch boxes, picnics, or meals prepared in advance.

And if you’re having guests over, consider serving it in a big pasta salad with some grilled vegetables, mozzarella, sun-dried tomatoes, and fresh basil. It takes almost no effort, but it always makes a great impression at the table ;-)

Zucchini pesto also pairs well with gnocchi, rice, quinoa, or even steamed potatoes. In short, don’t limit it to just pasta!

A Tip for Avoiding Food Waste with Zucchini

Let’s be honest: in the summer, zucchini can quickly pile up in the crisper. You buy two, then three, then someone gives you some from their garden… and suddenly, you don’t know what to do with them.

Zucchini pesto is a great way to avoid food waste. Even a zucchini that’s starting to go can get a new lease on life in this sauce, as long as it’s still safe to eat, of course.

You can even make the pesto ahead of time and store it in the fridge in a tightly sealed jar, with a drizzle of olive oil on top to keep it from drying out too quickly. Then all you have to do is cook some pasta and toss it all together.

A good tip: taste it before adding salt. Between the Parmesan, the dried fruit, and the seasoning, the sauce may already be quite flavorful.

So, when are we going to make it?

All in all, zucchini pesto has everything it takes to become the star sauce of the summer. It’s quick, fresh, creamy, easy to customize, and perfect for whipping up a pasta dish in just a few minutes.

It’s the recipe to keep up your sleeve when you have a zucchini lying around, a bunch of basil to use up, or simply a craving for a simple, sunny dish.

Now that you know everything, all that’s left to do is break out the blender, cook the pasta… and set aside a generous handful of Parmesan to serve ;)
