How many days does a hard-boiled egg really last in the fridge?

Preparing hard-boiled eggs in advance is one of those small gestures that simplify life. Whether to solve an express breakfast, complement a salad or improvise a quick dinner, having a couple of hard-boiled eggs in the fridge is always a good idea. However, if we want to take advantage of them without putting our health at risk, there is a key question we should ask ourselves: how long will a boiled egg last in good condition if we keep it in the fridge?
Cook well, preserve better
The first step to extend the life of a boiled egg is in its cooking point. The more cooked the yolk is, the longer it will keep. Ideally, they should be boiled for at least ten minutes after the water comes to the boil. This type of complete cooking, known as hard-boiling, minimizes the risk of bacterial proliferation if stored for several days.
How long do they really last in the refrigerator?
On this point, the most reliable sources agree. According to the Egg Institute, a cooked egg with the shell intact can be kept without problem in the refrigerator for up to seven days. This recommendation is also supported by the United States Department of Agriculture (USDA), which states the same safety period as long as the eggs are kept well refrigerated at a constant temperature of 4 °C or lower.
But there is more: if the egg is peeled, the recommendation changes. The USDA and FDA (U.S. Food and Drug Administration) advise consumption within 3 to 5 days, and always stored in an airtight container. A narrower consumption window due to the loss of protection offered by the peel.

Cool quickly after cooking
Once cooked, it is advisable to stop cooking as soon as possible. To do this, simply immerse the eggs in a bowl of very cold water or ice for a few minutes. This not only improves their texture, but also reduces the risk of bacterial growth, as indicated by the FDA, which reminds us that no cooked food should spend more than two hours out of the refrigerator (one if it is very hot).
Storing them correctly
When they are already cold, it is best to place them in an airtight, clean and dry container. If they are slightly cracked, they can be kept for a couple of days, but it is safest to consume them as soon as possible. A bit of kitchen paper at the base of the container helps to absorb moisture.
Place them in the right place in the refrigerator.
Avoid storing them in the door. Rather place them in the middle or upper part, next to dairy products or leftovers, where the temperature is more stable. And if you have cooked several, label the container with the cooking date. A small gesture that avoids major mistakes.
What if I have doubts?
As a general rule, if the egg smells funny, has a strange color or an unusual texture, the wisest thing to do is to throw it away. A strong sulfur or ammonia smell, a slimy white or a dried-out yolk are clear signs that the egg is not in good condition.
