This chickpea salad is everything you need on hot days: refreshing, quick and super nutritious

Light, nutritious and full of flavor, chickpea salad with cod is the perfect choice for warmer days. It combines the firm texture of chickpeas with the delicacy of shredded cod, as well as fresh herbs, olive oil and olives to enhance the freshness of the dish. Whether as a starter or main meal, this salad is an explosion of Mediterranean flavors that pleases the palate and nourishes the body without weighing it down.


The ingredients:

  • 1 lb desalted cod
  • 1 lb chickpeas (cooked and drained)
  • 1/2 chopped onion (raw or sautéed)
  • 2 tomatoes, diced
  • Olives (to taste)

Seasoning:

  • 1 handful parsley (chopped)
  • Juice 1/2 lemon
  • olive oil
  • 1 tablespoon vinegar
  • Salt
  • Pepper

Preparation:

  1. Cook the cod in boiling water for about 10 minutes. Leave to cool slightly. Remove the bones and skin. Shred it.
  2. Place the shredded cod, chickpeas, onion, tomatoes and olives in a bowl. Mix together.
  3. Season with parsley, lemon juice, olive oil, vinegar, salt and pepper to taste. Mix well.
  4. Chill in the fridge until ready to serve. Enjoy!
