Why arugula can dethrone basil in this pesto (and save your budget!)

When you think of pesto, you immediately imagine fragrant basil leaves. But have you ever tried arugula pesto? As well as being ready in just 5 minutes, this alternative is economical and full of zest. Arugula, with its peppery, slightly bitter taste, is the perfect substitute for basil in the traditional recipe, for a result that's original, bold and downright more accessible!
Ingredients:
- 3.5 oz/100 gr arugula
- 1 clove of garlic
- 1/2 cup/50 gr grated parmesan cheese
- 2 oz/60 gr pine nuts
- 1/3 cup/80 gr extra-virgin olive oil
- Salt to taste
Preparation:
- Wash the arugula thoroughly, dry well and transfer to the blender. Add the degermed garlic clove, grated Parmesan and pine nuts. Blend at low speed.
- Add a pinch of salt. Pour in the oil, continuing to blend until the mixture is smooth.
- The arugula pesto is ready!
