120g insalted butter

50g icing sugar + more for dusting

a pinch of salt

1/2 tsp vanilla extract

50g ground almonds


  • Preheat oven to 160 ° C.
  • Sift flour once. Greaseproof paper baking sheet.
  • Beat butter, sugar, salt and vanilla extract until soft.
  • Fold the flour and almonds to the butter mixture using a spaula.
  • Refrigerate the dough for about 20 minutes.
  • Roll dough into small balls, each about 8g.
  • Place on the baking sheet.
  • Bake for about 20 minutes.
  • Remove from heat and let cool on a rack. Once cooled.
  • Dust with icing sugar and store in an airtight container.
