Preparation
Parisian blinis:
Use a cookie cutter the same size as the blinis and cut circles out of the ham, cheese and salad. Layer a circle of salad, a circle of ham, another circle of salad and a circle of cheese on the blini.
* You can also add other layers and close the sandwich with another blini.
Pesto blinis:
Spread 1 to 2 teaspoons of green pesto sauce over the blinis. Tear the slice of Parma ham into small pieces and place them on the pesto.
* You can add toasted pine nuts on top.
Italian blinis:
Spread 1 to 2 teaspoons of red pesto on each blini then place a ball of mini mozzarella on top. Cut black olive slices and place them on the toast. Plant basil leaves on the side.
* You can replace the red pesto with green pesto without any worries.
Blinis with tapenade:
Spread 1 to 2 teaspoons of tapenade on each blini. Add about 5 capers on top.
*You can replace the capers with marinated roasted peppers.
Honey goat’s cheese blinis:
Cut slices from the goat cheese log. Place a slice on each blini and add a teaspoon of honey on top.
* You can add pepper, thyme (or rosemary) and even fig (fresh or roasted) for maximum flavor!
Shrimp blinis:
Spread the blinis with 1 to 2 teaspoons of cream cheese. Shell cooked shrimp and place them on top of the cheese. Add 1 teaspoon of lemon juice.
*You can season your blinis with a little pepper and why not add lemon zest.
Basque blinis:
Cut shavings of sheep's cheese and place them on the blinis. Add a teaspoon of black cherry jam.
*You can also combine goat cheese with fig jam.
Smoked salmon blinis:
Cut the avocado into small cubes and place them on the blinis, add smoked salmon cut into small pieces.
* You can season with a little pepper and add lemon juice and zest (lemon or lime). You can also make a cream cheese base.
Paté blinis:
Place 1 large tablespoon of tuna paté on the blinis.
* You can use the paté of your choice. We made tuna paté easily by mixing crumbled tuna with cream cheese and lemon juice, salt and pepper.
Arrange the blinis on a board or large platter and voilà, it's ready!
