Cut the banana into 4 pieces, then slice each piece in half lengthwise.
Dip the banana pieces in brown sugar.
Cut the filo pastry sheets in half and place a piece of banana at one end.
Fold the sides over the banana, then roll it up in the pastry.
Fry the pastries in hot oil, sprinkling with brown sugar to caramelize. Avoid placing them on paper towels after frying, as the caramel may stick.
And there you have it, your crispy bananas are ready!
Observations
Filo sheets: can be replaced with brick pastry sheets.
