150 g self-raising-flour

100 g sugar

175 g butter at room temperature

3 eggs at room temperature

Fresh orange juice from 3 oranges


  • Grease a muffin tin. Beat the sugar and the butter until creamy.
  • Add the eggs one by one and combine well at each adding. Add the orange juice, combine well.
  • Fold in the flour and combine well using a wooden spatula. Pour the batter into a muffin tin.
  • Bake at 180C for 20 to 25 minutes or until set.
