Preparation
Whisk the egg whites at medium speed with half the sugar. When they start to form peaks, add the other half of the sugar. Whisk until it is very stiff and forms peaks.
Take a tablespoon of white meringue, then add food coloring to the rest.
Form some hats with the red meringue using a piping bag. Cut the spike at the top with a pair of scissors. Then, make white balls on top of the hats using the white meringue.
Bake 75 min at 250°F (120°C).
Melt the chocolate, and dip the base of the hat in it. Then dip it in the grated coconut. Do the same with the top of the hat.
There you are, your Santa Claus meringues are ready!
