Pour the aquafaba at room temperature into a large bowl and whisk at high speed until stiff peaks form (about 5 minutes).
Gradually add the icing sugar while continuing to whisk, then add the vanilla extract. Once all ingredients are well combined, transfer the meringue into a piping bag.
Pipe the meringues onto a baking tray lined with parchment paper. Place in a preheated oven at 120°C (250°F) for 1 hour and 30 minutes.
