Whisk the egg whites at medium speed with half the sugar. When they start to form peaks, add the other half of the sugar.
Whisk until it is very stiff and forms peaks.
Add a little bit of food colouring (be careful, it's better to put not enough than too much).
On a baking tray, form little trees using a piping bag, doing 3 little pressures in a row.
Sprinkle with little sugar pearls, then bake for 1 hour at 230 °F (110°C).
There you are, your little meringue Christmas trees are ready !
