- Whisk the egg whites at medium speed with half the sugar. When they start to form peaks, add the other half of the sugar.
- Whisk until it is very stiff and forms peaks.
- Add a little bit of food colouring (be careful, it's better to put not enough than too much).
- On a baking tray, form little trees using a piping bag, doing 3 little pressures in a row.
- Sprinkle with little sugar pearls, then bake for 1 hour at 230 °F (110°C).
- There you are, your little meringue Christmas trees are ready !
