Strawberry and chocolate stuffed french toast

Fresh strawberries - 1/4 pound

Eggs - 2

Whole-wheat sandwich bread - 8 slices

Semi-sweet chocolate chips - 4 teaspoons

Low-fat ricotta cheese - 4 teaspoons

Low-fat milk - 1/2 cup

Vanilla extract - 1/2 teaspoon

Confectionary sugar - 1 teaspoon


  • In a large bowl, whisk together the eggs, milk and vanilla extract. Keep aside.
  • Spread a tsp of ricotta cheese on the bread. Top with 4-6 slices of strawberries and a tsp of chocolate chips.
  • Cover with another slice of bread of top like a sandwich. Follow the same procedure for the rest of the bread slices.
  • Take a nonstick skillet, use cooking spray/butter, preheat the skillet.
  • Place each sandwich on the skillet, cook over medium for 1-2 minutes on each side until golden brown. And all the chocolate is melted.
  • Transfer to the serving platter. Sprinkle with confectionary sugar and top with strawberry slices.
  • Serve with waffle/pancake syrup on top.
