Ingredients

• Rice 1 Cup
• Grated Carrot 1 Cup
• Desi Ghee/Clarified Butter 1 tablespoon
• Powdered Jaggery/Sugar 2 tablespoons
• (or as per taste)
• Dry Coconut/Desiccated  2 teaspoons
• Cloves 2-3
• Cashew Nuts 15-20
• Almonds 8-10
• Rose Water 2 teaspoons
• Raisins 2 teaspoons
• Cardamom Powder 1 teaspoon

Preparation

• Wash and soak rice for 15-20 minutes. Drain out the water.
• Heat ghee in pressure cooker or heavy bottom pan.
• Fry cashews, almonds and raisins till golden brown. Remove and drain on absorbent paper.
• Add cloves to the ghee, saute for 2 minutes. Add grated carrot, stir well till it change the color.
• Add cardamom powder, coconut and jaggery, mix well.
• Add rice and 1/2 cup of water.
  Add raisins, cashews and almonds(except few for garnishing) and rose water.
• Bring to a boil, reduce heat and cook till done.
• Garnish with fried cashews and almonds.
• Serve hot.
