2 potatoes (cut into chunks wth the skin on)

1/4 (100g) cauliflower (separate the floret)

1/2 cup frozen green peas

4 shallots (sliced)

2 green chillies (slit and cut into big pieces)

1 teaspoon cumin seeds

2 teaspoons chilly flakes

1/2 ginger (sliced into thin stripes)

4 cloves garlic (sliced)

2 bay leaves

1 teaspoon mustard seeds

1 teaspoon saffron powder

3 tablespoons olive oil

salt to taste


  • When oil is heated, saute the shallots, ginger, garlic, green chillies, cumin and mustard seed. Cook for 3 minutes or so.
  • Add in potatoes, saffron powder, bay leaves,chilly flakes and salt to taste. Stir and mix well inside.Put in the cauliflower and stir again.
  • Add 1/2 cup water inside, mix and wait for the veges to be cooked.
  • This will take about 10-15 minutes. Once this is done, mix in the green peas and the coriander leaves. Remove from heat.
