- Cut potato into 4 pieces and cook them in boiling water till they are soft but not mushy. Once done, drain the water, let it cool and then peel the skin and keep them aside.
- Heat oil in a pan, add mustard, chana dal, black gram dal, hing, curry leaves, green chillies and grated ginger. Fry them for few seconds and then add turmeric powder and sauté the onions.
- Next slightly mash the potatoes and add to this, add salt and mix well.
- Garnish with coriander leaves or grated carrot. Give it a dash of lemon juice and this is ready to go inside the fold now.
