- In a bowl combine the roasted peppers, the herb salad mix, and pecans halves; stir. Add feta cheese.
- In another container, mix red wine vinegar with 3 tbsp of jarred feta cheese seasoned oil. Sprinkle the dressing over the roasted pepper and herbs salad and stir well.
- Add freshly ground pepper and salt to your taste. You can either serve this picnic food portioned on plates or stuff other roasted or fresh peppers with the pepper-herb salad. For stuffing you can use both red and yellow peppers.
