Manga Achar /Mango Pickle
Preparation

Cut the mango into small pieces with the skin on.

Add salt in to the pieces ,mix well and keep for couple of days in a tight container and keep it aside.

On the following day heat oil in a kadai, splutter mustard seeds and curry leaves.

Reduce the fire to low and add finely chopped ginger ,garlic and green chilly, saute till the raw smell goes.

Add red chilly powder,turmeric powder,asafoetida powder and fenugreek powder and saute for couple of minutes.

Add vinegar and remove from the fire. Allow it to cool. Once this mixture cools add it to the mango pieces and mix well, add salt if needed.

Immediately transfer it to parani (porcelain jar) or glass bottle.

Goes well with Curd rice/Kanji or any other bland preparation.
