Dry roast the moong dhal till you get a nice aroma but do not let it sit in the pan for more than that. We just want to heat up a little bit and thatz it.
Soak this dhal for atleast 20 minutes. Clean the rice well. Pressure cook both rice and dhal with salt, pepper, cumin powder for 5 minutes after you get a whistle.
In the meantime, take a wide pan and add the ghee and oil. Add the pepper and cumin seeds and go back may be a few steps away as it will pop up and that might hurt ur face.
Now add the grated ginger, green chilly, curry leaves one by one and mix it well. Finally add the cashews and fry until it turns crispy .
Finally transfer this mixture into the cooked dhal mixture and combine well. If the mixture is too thick u may add a cup of water when the pongal is hot.
Or else, you may add a cup of hot water instead of cold water to make it little bit watery. Combine well.
