Ingredients

• Old fashioned rolled oats - 1/4 cup
• Vegetable stock - 2 cups
• Celery - 1/4 cup
• Carrot - 1/4 cup
• Onion - 1/4
• Corn - 3 tbsp
• Green Peas - 3 tbsp
• Cabbage - 3 tbsp
• Capsicum - 3 tbsp
• Tomato - 1/3
• Corn Starch - 1 tsp
• Vinegar - 1/2 tsp
• Chilli Powder
• Dry Mint Powder
• Oil - 1 tsp
• Salt - As per taste

Preparation

• Heat the oil in a saucepan and add all the vegetables except the tomatoes to it.
• Fry for 2 minutes and add the vegetable stock to it. Add in the chopped tomatoes.
• Add the oatmeal and let the soup boil. Add the salt, vinegar, chilli powder, mint powder and mix well.
• Once the soup starts boiling, mix the corns starch with couple of spoons of water and mix it into the soup on medium low heat.
• Adjust the salt and take the soup off the heat. Enjoy the oatmeal mixed vegetable soup while it is still hot.
