- Rub the brisket and allow them to rest covered at room temperature for about 45 minutes. Preheat your oven to 325°F.
- Place the briskets on a rack fat side up in a roaster and pour the water and beer in the bottom of the roasting pan. Roast for 1 hour.
- Add more water to the bottom of the pan if needed. Then tightly cover the pan with aluminum foil and lower the temperature to 275°F.
- Cook for another hour. Now remove the pan from the oven, discard the foil covering the pan, and carefully wrap each brisket tightly in aluminum foil and place them back on the rack in the pan and then back into the oven.
- Now let them cook until they reach an internal temperature of 210°F. This will take about 2-3 hours. When done, keep them tightly wrapped in the foil and allow them to rest for 30 minutes. Slice them against the grain and chop.
