Recipe: oyster mushrooms with red peppers and haloumi cheese

Ingredients

Number of serving: 2
1 pack oyster mushrooms, 250 g (you may want to remove the stalks of the mushrooms as they can be tough)

3 red peppers, de-seeded and cut in half lengthways

1 pack haloumi cheese, sliced


salt and pepper

Preparation

  • In one frying pan add a little olive oil and start to fry the red peppers on a high heat, until soft. They do spit quite a bit so it best to cover them with a lid.
  • In the same pan or another depending, on the size, add the oyster mushrooms and fry quickly until browned on both sides.
  • In another pan add the haloumi and dry fry on both sides until brown.
  • To serve, place the peppers on two plates, pile with the haloumi and then the oyster mushrooms on top.
  • Season with salt and pepper and drizzle over some olive oil or balsamic vinegar.
  • Serve with crusty bread.
