Soak the dried mushrooms in hot water and add 1 teaspoon of sugar to water when soaking the mushrooms. Flip the mushrooms to make sure that the stems are submersed too. If you can take a knife and cut off the stems, then they are ready. Add the fresh and soaked dried mushrooms to boiling water for approximately 10 minutes.
Next, cut the baby bok choys lengthwise so it's easier to eat. After washing the greens, boil them in a separate pot from the mushrooms with 1 teaspoon sugar. Remove the bok choys with a slotted spoon after about 8 minutes. Do not leave them so long that they look like wilted spinach.
Mix the soy sauce and oyster sauce and pour it over the mushrooms and baby bok choy greens.
