  • Soak the dried mushrooms in hot water and add 1 teaspoon of sugar to water when soaking the mushrooms. Flip the mushrooms to make sure that the stems are submersed too. If you can take a knife and cut off the stems, then they are ready. Add the fresh and soaked dried mushrooms to boiling water for approximately 10 minutes.
  • Next, cut the baby bok choys lengthwise so it's easier to eat. After washing the greens, boil them in a separate pot from the mushrooms with 1 teaspoon sugar. Remove the bok choys with a slotted spoon after about 8 minutes. Do not leave them so long that they look like wilted spinach.
  • Mix the soy sauce and oyster sauce and pour it over the mushrooms and baby bok choy greens.
