Shrimp pasta with feta, leeks and mint
Her pasta with caramelized leeks and feta cream sauce sounded so delicious.
Ingredients

225 g uncooked pasta
2
leeks; tall dark part cut off and sliced thin
125 mL feta, chopped
300g
shrimps; uncooked, peeled and deveined
salt to taste
pepper to taste
Preparation
- Cook pasta in a saucepan ac.cording to the directions on the package.
- Heat olive oil over medium heat in a pan. Saute the leeks until they are tender.
- Add garlic and cook for 1 minute. Add feta and let it melt for 2 to 3 minutes.
- Remove from heat. Heat butter over medium heat in an other pan.
- Cook shrimp until done. Combine the shrimps with the leeks-garlic-feta mixture and the pasta in the saucepan.
- Season with salt and pepper and reheat a little bit over low heat if necessary
