- 1)Sri Lankan Potato Curry:
Peel and slice the potatoes lengthwise. Boil them until they are just tender. Drain and keep aside. Fry onion, garlic, all the spices and curry leaves until they are brown. Add the coconut mixture, bring to the boil and let it boil for 2 minutes. Finally add potatoes and cook for 2- 4 minutes on a low heat. Serve hot with rice. - 2)Mushroom Masala:
Heat oil in a kadai and add onions. Saute onions till they becomes pink and add tomatoes and mushrooms, salt and all spices except garam masala powder. Cook till the juice of tomatoes dries up. Then add tomato ketchup and mix thoroughly. Also add chopped coriander leaves, green chilli and garam masala powder. Mix well and cook on a low heat for 3 -4 minutes. Serve with chapati / parathas.
