3 pcs of cauli flowerets
1 capsicum cubed
2 brinjals sliced
1 big potato sliced
1/4 cup frozen or fresh peas
1 onion cubed
1 tomato cubed (pulp removed)
1 tsp red chilly powder
1 tsp coriander powder
1/4 tsp tumeric powder
3 pinch amchur powder
1/2 tsp salt
oil for deep frying
2tbsp oil
1/2 cup chopped coriander leaves
2-3 green chillies sliced


Step 1

Deep fry cauliflower, Potato & Brinjal OR Mix in 1 tbsp oil & grill them in oven at 170 degrees for 5 -6 minutes.

Step 2

Heat 2 tbsp oil in a wok(Kadai or deep pan). When oil is hot add in all the vegetables.

Step 3

Mix in tumeric, salt, red chilly powder & coriander powder.

Step 4

After adding all the dry masala, stir well.Then add amchur powder (dry mango powder).

Step 5

Now add in cubed onion, capsicum & tomato.

Step 6

Mix all the above on medium flame till all the masala has coated on the vegetables.

Step 7

Dd chopped coriander serve hot with roti
