Struggling to get your kids to eat vegetables? Present them in a different way: as patties! Easy and quick to make, you can serve these soft little cakes alongside a piece of meat or fish. Made with zucchini, carrots, and potatoes, they can even be enjoyed on their own as an appetizer. We bet they'll ask for more ;-)

Peel the potatoes and cut them into cubes. Cook them in boiling water for about 15 minutes. Drain and mash.
Season with salt, pepper, and nutmeg. Add the whole egg and mix well.
Grate the unpeeled zucchini and peeled carrots, and sauté them in a bit of olive oil for about 5 minutes.
Add the sautéed vegetables to your mash and mix well. Add the flour and incorporate it thoroughly.
Drop spoonfuls of this mixture onto a baking sheet lined with parchment paper. If you have rings, use them to form nice patties.
Bake for 20 minutes at 430°F (220°C).
