Cook time27 min

Soak chestnuts in hot water for an hour. Remove shell and dark skin (with knife). Boil chestnuts in pan with just enough water to cover the nuts for 10 minutes.
Drain water and put water again, and then boil with sugar and 4-5 drops of yellow food colouring. Cook it for 20 minutes.
To make pound cake :
Separate the yolks from the eggs and save both. Beat the whites until firm and add 1/3 of sugar. Continue to beat until the sugar is well mixed. In another bowl, beat the egg yolks with the remaining sugar until the mix becomes white.
Fold in half of the egg whites. Add half of the flour by cutting it in. Fold in the remaining egg whites. Add the rest of the flour by cutting.
Melt butter and add to the mix, cutting it in, add chestnuts, pour into loaf pan about half full. Bake in the oven at 365 degrees for 25-30 minutes.
