Preparation

  • Soak chestnuts in hot water for an hour. Remove shell and dark skin (with knife). Boil chestnuts in pan with just enough water to cover the nuts for 10 minutes.
  • Drain water and put water again, and then boil with sugar and 4-5 drops of yellow food colouring. Cook it for 20 minutes.
  • To make pound cake :
    Separate the yolks from the eggs and save both. Beat the whites until firm and add 1/3 of sugar. Continue to beat until the sugar is well mixed. In another bowl, beat the egg yolks with the remaining sugar until the mix becomes white.
  • Fold in half of the egg whites. Add half of the flour by cutting it in. Fold in the remaining egg whites. Add the rest of the flour by cutting.
  • Melt butter and add to the mix, cutting it in, add chestnuts, pour into loaf pan about half full. Bake in the oven at 365 degrees for 25-30 minutes.
