- 1 cup all purpose flour

- ½ cup oats

- 1/3 cup sugar

- ¼ teaspoon baking powder

- ¼ teaspoon salt

- 1 egg

- ¼ cup extra virgin olive oil

- 1/3 cup milk

- 1/2 teaspoon vanilla

- 1 tablespoon fresh lemon juice

- Finely grated zest of 1 lemon

- 2 teaspoons fresh lemon thyme leaves

- Lemon Icing

- 3/4 cup confectioner's sugar

- 1 tablespoon milk

- 2 teaspoons lemon juice

- 1 teaspoon lemon zest until smooth


Step 1

Heat the oven to 375f. In a medium bowl, whisk together the flour, oats, sugar, baking powder, and salt.

Step 2

In another bowl, whisk together the egg, oil, milk, vanilla, lemon juice, zest, and thyme. Pour the wet ingredients into the dry ingredients and fold together with a spatula until just moistened.

Step 3

Lightly grease a baking sheet. Drop the dough by heaping teaspoonfuls, spaced 2 inches apart. Bake in the center of the oven for 12-14 minutes or until just brown around the edges. Remove from the oven and transfer to a cooling rack.

Step 4

For the icing, whisk together 3/4 cup confectioner's sugar, 1 tablespoon milk, 2 teaspoons lemon juice and 1 teaspoon lemon zest until smooth.

Step 5

Once cool, drizzle the icing over the cookies and allow to set. The cookies will keep, covered for a couple days.
