Mochiko banana donuts

(Makes ~8 donuts with a 1-inch diameter)

9 tbsp flour (I used unbleached all-purpose)

7 tbsp mochiko/glutinous/sweet rice flour

chocolate chips (optional)


  • 1. Mash the banana. This is easier the riper your banana is.
    2. Combine flours with banana. You should have a dough that is only slightly tacky.
    3. Knead dough until it feels uniformly smooth.
    4. Separate dough into eight portions, and roll into balls. Flatten slightly in your hands. You may wand to flour your hands at this point.
    Alternately, you can flatten out a portion of dough, sprinkle a couple of chocolate chips in the centre, then bring the outer dough over the chocolate and roll into a ball. Roll until you feel dough is evenly covering chocolate on all sides.
    5. Deep-fry your donuts.
