Mushroom Dosa/Mushroom Roast

I love eating dosa with filling (cauliflower,carrot,onion,potato,mushroom) more than dosa with chutney/sambar. these varities of dosa are popular in souther India...Almost in all vegetarian hotels they serve for both breakfast n dinner.Mushroom roast is my own recipe ,quite similar to curry but tastes great with dosa...Try this !!!

Heres the Recipe:

IngredientsDosa Batter 2 cupsMushroom 1-8 oz PackOnion 1 medium(sliced)Tomato 1/2 (Chopped)Garlic 2 no.(crushed)Ginger 2 " piece(crushed)Chilli Powder 1 tspGaram Masala 1/2 tspCumin Powder 1/2 tspTurmeric Powder a PinchSalt to tasteCoriander leaves 5 sprigs(finely chopped)mustard seeds 1/2 tspFennel seeds 1/2 tspOil 2 tsp
Method
Heat oil in a sauce pan,add mustard seeds,fennel seeds allow it to splutter.Then add crushed ginger n garlic fry for few seconds and add sliced onions,few curry leaves fry till onion turns light brown,And add chopped tomatoes and saute till it turns mushy.then add all the dry powders(chilli,turmeric,garam n cumin powders) and fry for a minute.Now add the sliced/chopped mushrooms and stir well.Add about 1/4 cup water ,enough salt ,some chopped coriander leaves and cook till mushroom get cooked..Do not drain water completely ,retain some moisture and turn off the stove .Lastly add some chopped coriander leaves and the mushroom filling is now ready .
heat a tawa/griddle,spread oil/ghee using onion slice/potato slice/brinjal slice and pour a ladle of batter and spread thinly in a circular motion.
Keep 2 spoons of mushroom filling in the center and spread lightly and cover it with a lid and cook for 1 -2 minutes or dosa turns crisp n cooked.
Then fold both the edges and remove from the tawa n serve...No need for side dish,can enjoy with onion tomato raitha too.
Note:Can use this mushroom gravy for Chapathi/Puri also...
