- Quaker quick oats: 1 cup

- Appam podi/Fine rice flour: 1/3cup

- Freshly grated coconut: 3/4cup

- Cumin seeds: 1 teaspoon

- Cooking soda:1/3 teaspoon

- Sugar:1 1/2 tablespoon

- Salt,to taste

- Oil:as needed

- Water:


Step 1

Dry roast oats on medium heat until done about 3-4 minutes,stirring constantly. Cool slightly and then dry grind to a fine powder. Keep aside.

Step 2

Grind together grated coconut and cumin seeds to a fine paste by adding enough water(about 4/7cup).

Step 3

In a large bowl,combine powdered oats,rice flour&coconut-cumin paste. Add enough water(about 1 1/2cup to 1 2/3cup) to make a semi thick batter of pouring consistency. Mix well by hand.

Step 4

Cover and keep aside for 9-10 hours. Now add cooking soda,sugar and enough salt and mix well. Let it sit for 7-10 minutes.

Step 5

Heat a non-stick tava on medium heat. When hot, smear the surface with 2-3 drops of oil(if needed).

Step 6

For each appam,pour about 1/4cup of batter,spreading it out slightly to make a 4'' disk.

Step 7

Cook for about 1 1/2 minute per side.Serve hot with egg curry/or with ur favorite curry.
