  • Lemon zest scones - Preparation step 1Combine egg and milk. Grate the cold butter (it will be easier to incorporate. You can also cut it into small cubes).
  • Lemon zest scones - Preparation step 2Combine flour, 1/3 cup sugar, and baking powder. Add the cold grated butter and rub it in with your fingertips until the mixture resembles damp sand.
  • Lemon zest scones - Preparation step 3Gradually add the milk and egg mixture while mixing until you have a homogeneous dough. Set aside the remaining milk and egg mixture for glazing.
  • Lemon zest scones - Preparation step 4Add your chosen filling: we chose to add lemon zests. Mix well and refrigerate the dough for 15 minutes.
  • Lemon zest scones - Preparation step 5Form a ball with the dough and divide it in half. Cut each ball into 6 parts and shape little balls from each part.
  • Lemon zest scones - Preparation step 6Place the balls on a baking tray lined with parchment paper. Flatten the balls and brush with the remaining milk and egg mixture. Sprinkle with sugar.
  • Lemon zest scones - Preparation step 7Bake for 15-17 minutes at 350°F (180°C).
  • Lemon zest scones - Preparation step 8And there you have it, your scones are ready to accompany your tea. Don't hesitate to bring out the jam!

Observations

Can you freeze scones?
Yes, you can freeze the scones either when the dough is ready or after they are baked.

Can you reduce the amount of butter?
You can reduce the butter in this recipe by half if you wish. You can also replace it with margarine.

Can you replace the toppings?
You can replace lemon zests with zests from other citrus fruits (like orange), dried fruits, a large teaspoon of vanilla extract, or even chocolate chips for extra indulgence.

Round scones or triangular scones?
We made round scones, but feel free to make them triangular. In step 5: Cut the dough in half. Form two balls and flatten them. Cut each ball into 6 triangles. You will then have 12 triangular scones.
